The Center of Excellence in Food, Tourism & Leisure (CoEFTL) took part in the International Food Marketing Research Symposium (IFMRS) 2024, held in beautiful Tromsø, Norway, from June 18 to 20. Organized by the MAPP Centre at Aarhus University in collaboration with the University of Tromsø’s School of Business and Economics and Nofima, this annual event brings together experts in food marketing to discuss new research and trends.
Stavroula Ziavras, presented her collaborative work with Athanasios Krystallis and Zozeta Miliopoulou from the CoEFTL, at the American College of Greece. Their study, “Breaking bug! Exploring communication strategies to overcome cultural barriers in entomophagy acceptance”, showcased preliminary findings on how insect visibility on packaging and message framing can shape consumer attitudes and behaviors towards insect-based foods. The approach of incorporating social norms into message framing aims to change negative perceptions and offer new insights for marketing these products in Western markets.
